Quick answer: A pickle martini is a dirty martini made with dill pickle brine: 2½ oz (75 ml) vodka or gin, ¼ oz (7.5 ml) dry vermouth and ½ oz (15 ml) dill pickle brine, stirred (or shaken, if you like it icy) and strained into a chilled glass with a cornichon or pickle spear. It took off on TikTok around 2022 as people swapped olive brine for pickle juice in dirty martinis, and has stayed popular as pickle-flavored everything trended in 2023–2025.

Pro tip: Chill your glass and use fresh citrus squeezed the same day. Taste before you pour; a few drops of lime or simple syrup fixes most balance issues.
❄️
Batching: Mix everything except ice and bubbles up to a day ahead and keep it in the fridge. Shake or stir each drink with ice to order. Fresh citrus is best within 24 hours.

  • 1 oz (30 ml) fresh cucumber juice (blend and strain half a small cucumber)

The dirty martini has always had fans — people who like a cold, salty drink tasting of olives. In the early 2020s, those fans started replacing olive brine with pickle brine, and the pickle martini became one of TikTok’s favorite drink trends.

Where and When It Went Viral

The pickle martini didn’t come from one bar or one creator. Around summer 2022, TikTok users started experimenting with dirty martinis, swapping olive brine for pickle juice and adding other savory ingredients. The trend continued: by 2023, people were adding pickled onions and kimchi to martinis, and pickle-flavored products of every kind were everywhere.

It fit into a larger pickle trend. Pickle-flavored snacks, sodas and even pickle-flavored desserts went viral in 2023 and 2024, and searches for pickle martini recipes rose sharply. Pickle drinks remain one of the few viral drink trends that actually work at home.

Why It Works

Pickle brine is sour, salty and full of dill and garlic. In a martini, it does what olive brine does — adds savory, salty flavor that cuts through the alcohol. Dill and garlic also go well with gin’s botanicals.

Why Many Pickle Martinis Are Bad
  • Too much brine. More than an ounce makes it taste like pickle juice with vodka. Half an ounce is enough.
  • Sweet pickles. Bread-and-butter pickle brine is sugary and makes the drink cloying.
  • Shelf-stable brine. Some pickles in jars on store shelves are harsh and vinegary. Refrigerated pickles have a fresher brine.
  • Warm glass. Martinis need to be very cold. Freeze the glass.
The Key Technique: Strain the Brine

Pickle brine contains seeds, garlic pieces and spices. Pour it through a small strainer before mixing. Then stir everything with ice for about 30 seconds until it’s very cold.

Stirring makes a clear, smooth drink. Many dirty-martini drinkers prefer it shaken, which makes it colder, cloudier and a bit more diluted, with tiny ice crystals. Either is fine.

For a Party

Martinis are easy to batch. Combine vodka, vermouth, strained brine and water (to replace the water from stirring) in a bottle and freeze it. It won’t freeze solid because of the alcohol. Pour into chilled glasses and add a pickle.

Pickleback vs. Pickle Martini

Don’t confuse the pickle martini with the pickleback, a shot of whiskey followed by a shot of pickle brine. The pickleback is widely credited to the Bushwick Country Club bar in Brooklyn in the mid-2000s and later spread to bars across the country.

The Mocktail: Brine Time

Pickle brine already has plenty of flavor, so the mocktail is easy. Use a zero-proof gin alternative for structure and add cucumber juice for body and freshness. Stir it cold and garnish with a cornichon.

Gin or Vodka?

Both are popular, and they make different drinks.

Vodka is neutral, so the pickle flavor is front and center. If you want a drink that tastes strongly of dill and garlic, use vodka.

Gin adds juniper, coriander and other botanicals, which go surprisingly well with dill. A gin pickle martini is more complex and herbal.

Some people also use a half-and-half mix.

Vermouth

A dirty martini traditionally uses little vermouth. A quarter-ounce of dry vermouth adds a bit of wine-like depth that keeps the drink from tasting like straight vodka and brine. Skip it if you prefer. If you use vermouth, keep the bottle in the fridge once opened — oxidized vermouth tastes stale.

Food Pairings

The salty, savory flavor of a pickle martini goes well with salty snacks: potato chips, fried foods, oysters, deli sandwiches and charcuterie.

Enjoy responsibly — must be 21+.
