The Cheesecake Factoryโs menu is famously enormous, and its cocktail list follows suit. Among the fruit-forward drinks, the Pineapple Moscow Mule stands out: a tall, fizzy, ginger-spiked highball with a pineapple slice and a ginger gummy on top.
A Note on the Swap
We were asked to make a Cheesecake Factory Pineapple Mojito. We couldnโt find evidence one exists: it doesnโt appear on the menu or in recent reviews of the chainโs cocktails. The well-known Cheesecake Factory pineapple drink is the Pineapple Moscow Mule, so thatโs the recipe here.
What the Cheesecake Factory Serves
Recent reviews describe the Pineapple Moscow Mule as Reyka vodka with fresh lime and pineapple, topped with Fever-Tree ginger beer and garnished with a pineapple slice and ginger gummy cubes. Itโs served in a big glass, not the traditional copper mug. Reviewers call it a mule with the bright, juicy taste of pineapple.
Prices vary by location, and the Cheesecake Factory doesnโt publish its pours. The spec below is our own balance.
Why Copycats Taste Like Pineapple Soda
The obvious copycat is vodka, pineapple juice, lime and ginger beer. Itโs fine, but canned pineapple juice tends to disappear under spicy ginger beer, and whatโs left tastes like pineapple-flavored soda.
The fix is muddled fresh pineapple. Pressing a few chunks with a little simple syrup releases bright, tangy juice that tastes much more like fresh fruit. Add a splash of pineapple juice for body and the pineapple holds its own against the ginger.
Ginger beer matters too. Use a spicy one. Fever-Tree, which the restaurant uses, has real ginger heat. Ginger ale is too mild and sweet.
The Technique
- Muddle the pineapple with simple syrup in the shaker.
- Add vodka, pineapple juice and lime. Shake briefly with ice.
- Double-strain over fresh ice to catch pineapple fibers.
- Top with ginger beer, poured slowly so it keeps its fizz, and lift once.
Shaking before adding the ginger beer is the key. Never shake ginger beer, since it goes flat and can blow the shaker open.
The Garnish
The ginger gummies are a fun touch. At home, crystallized ginger or ginger chews (like Chimes) on a cocktail pick do the same job. Itโs a snack you eat as you drink, and it reinforces the ginger flavor.
Pitcher Version
For six drinks, blend 1ยฝ cups fresh pineapple with 1ยฝ oz (45 ml) simple syrup and strain it. Stir in 9 oz (270 ml) vodka, 6 oz (180 ml) pineapple juice and 3 oz (90 ml) lime juice. Chill. Pour about 3ยฝ oz of the mix over ice in each glass and top with 4 oz ginger beer. Keep the ginger beer in the fridge and add it only to individual glasses.
The Mocktail Version
A mule is one of the easiest drinks to make without alcohol, because ginger beer and fruit provide most of the flavor. Take out the vodka and add a splash of cooled green tea (or an NA vodka alternative). The teaโs dry, slightly bitter edge keeps the drink from tasting like soda, and itโs a nice match with ginger and pineapple.
Serving
Serve it with spicy food: buffalo blasts, Thai lettuce wraps or anything with chili. Ginger and pineapple both go well with heat.
Quick Fixes
- Pineapple getting lost? Muddle another chunk of fresh pineapple, or switch to a less sweet ginger beer.
- Too spicy? Use a milder ginger beer, or top with 3 oz instead of 4.
- Cloudy and pulpy? Double-strain it through a fine strainer.
